Underneath there's sweet notes of aged Sauternes, some raisiny old armagnac, dark chocolate and damp earth dusted with cinnamon and wheat beer. Reduction gives Tunnock's tea cakes, Chinese five spice, boozy morello cherries and dried apricots. The palate opens with
